Time for "Ribollita". This is a soup from beans and black cabbage, which can be recooked for several days and it gets always better.  But attention, it must be brought first to a perfect consistency.   And here everything can go wrong. I cook beans and cabbage separately and mix them afterwards to be sure for not getting a mess of overcooked cabbage and hard beans or the other way round.  Important also to cut out the central part of the cabbage. It will never cook... The beans, normally to use are "Cannellini" big white ones, but I am using also others, here a "fagiolo giallo"</p> <p>You serve the soup on dried bread (not toasted!) and obviously  wit a generous amount of Hig Quality Olive Oil.</p> </div> </div> Mon, 07 Jan 2019 17:54:13 +0000 Keizer 5669 at http://www.winesong.biz Chestnut Soup with two types of beans http://www.winesong.biz/index.php/node/5597 <span>Chestnut Soup with two types of beans</span> <span><span lang="" about="/index.php/users/keizer" typeof="schema:Person" property="schema:name" datatype="">Keizer</span></span> <span>Fri, 10/27/2017 - 12:55</span> <div><p>I had a bottle of "Rosso di Spicca" with it from "Le Vellette" winery.  The  "San Giovese" in the Rosso liked the Chestnuts very much</p> </div> <div> <h4 >DishOld</h4> <div>It is end of October - Chestnut time, I have my own Chestnut Tree at Buo Respiro and it is really joyful to go there and collect the Chestnuts.<br /> <br /> Chestnuts are mostly used for sweets, they are sweet. As I am very seldom prepare sweets I have to look for other combinations.<br /> <br /> You can prepare delicious soups combining the chestnuts with pulses. <br /> The classcial combination is a Chickpea Soup with Chestnuts<br /> (http://www.inorvieto.it/it/scegli/da_vivere_assolutamente/ricette_orvietane_zuppa_di_ceci_e_castagne.html)<br /> I tried with 2 different kind of beans, the little coloured one from the Trasimeno lake and big white one from Ascea, obviously cooking everything separately.<br /> <br /> You see the result after mixing, Sweet, but very flavored.<br /> </div> </div> <div class="maco-entity-reference"> <h4 >Recommended wines</h4> <div> <div class="maco-entity-reference-item"><a href="/index.php/wines/corio-rosso-del-umbria" hreflang="en">Corio Rosso del Umbria</a></div> <div class="maco-entity-reference-item"><a href="/index.php/wines/montefalco-rosso" hreflang="en">Montefalco Rosso</a></div> </div> </div> <div> <h4 >Image</h4> <div> <div> <img src="/sites/default/files/food_pairing/images/Castagne2TipeFagioli.jpg" width="500" height="549" alt="zuppa di castagne" typeof="foaf:Image" /> </div> </div> </div> <div class="maco-entity-reference"> <h4 >Food Tag</h4> <div> <div class="maco-entity-reference-item"><a href="/index.php/taxonomy/term/1867" hreflang="en">Chestnuts</a></div> <div class="maco-entity-reference-item"><a href="/index.php/taxonomy/term/1868" hreflang="en">Beans</a></div> </div> </div> Fri, 27 Oct 2017 17:55:53 +0000 Keizer 5597 at http://www.winesong.biz
